A Canadian startup is making it possible for every chef and seafood consumer to trace a fish back to the fisherman and the waters from which it was caught.
In a survey of over 1,300 chefs, the National Restaurant Association identified locally sourced meats and seafood, local produce, and environmental sustainability as the top three trends of 2014. Gluten-free foods were ranked number five.
